Happy Summer everybody!
I hope you’re enjoying these weeks whether you live North or South, East of West! As you well know, summer calls for greens so here I have a sweet and delicious option for your weekends lunch. Today I’m using my favorite fruit, FIGS! Oh well, I still remember myself as a kid climbing up a tree at my Aunt’s house with a plastic bag just harvesting figs for hours along with my cousins, those were the days!
This is my take on a “Sweet Arugula and Fig Salad”, so get your salad spinner out because it’s time for your greens!
Before we begin, I just want to mention an awesome product I just got. I’m talking about my new “Zyliss SwiftDry Salad Spinner”. This is tool is just amazing if you’re looking for a kitchen gadget to make sure to wash your greens properly and ending up with very crisp leafs at the end, not soggy-humid at all! Ingredients (2 portions)
4 cups of arugula.
4 cups of baby spinach.
3 tbsp cashews.
A few cucumber peels (which you can make with a potato peeler).
8 figs.
¼ cup grated parmesan cheese.
For the dressing
3 tsp honey.
4 tbsp cup balsamic vinegar.
¼ cup extra virgin olive oil.
Salt
Pepper
Instructions (10 minutes)
Wash all your greens.
To make the dressing just put all the dressing ingredients in a bowl and whisk for 2 minutes until well combined.
Add the dressing to the greens to incorporate. Add cashews, cucumber peels and parmesan cheese.
To plate just put a good amount of salad in a plate and add 4 figs cut in quarters as in the picture above.
Enjoy! You can add a few pieces of grilled chicken on top if you’re looking for a full meal!
