My take on a Clover Club using Prosecco

You know me, a drink with bubbles is a drink I will love.

I was inspired by a traditional Clover Club by a couple newly wed friends of mine, Laila and Harvey who introduced me to egg whites in cocktails as a form to texture addition. YES, egg whites in a cocktail, yes it’s safe to drink and no, this doesn’t make it a healthy cocktail, LOL.


While making this cocktail is a process, it is not a lengthy one and it’s pretty fun to make. Perfect for a holiday dinner party or date night.



Ingredients

  • 1.5 Oz of Cointreau.

  • 1/2 Oz of lime juice (half lime more o less).

  • The white of 1 egg.

  • 4 raspberries, plus 1 more for garnish.

  • A splash of Prosecco.


You will also need a coupe or martini glass, a shaker and ice.


Procedure

  1. Open the shaker and add the egg white, 4 raspberries, lime juice and cointreau. Shake for 15 seconds (you’re basically fluffing the whites with this action).

  2. Open the shaker and add a few (about 4) ice cubes, close the shaker and shake for 20 seconds or until the container gets freezing cold.

  3. Strain into the serving glass, top off with Prosecco and garnish with fresh raspberries.


This is a VERY handsome and deliciously fresh drink and I’m sure it’ll go great with almost any menu you have planned, especially if it's the one I put on my latest newsletter :D.
