My Banana Bread recipe

Oh Hello! :)

I think it was two years ago when we were in Boston visiting one of my husband’s cousins and I tried to make banana bread, the result? SUPER FAIL! The reason? I don’t even remember but I blame it on the freezing weather of course lol. But I don’t give up!

I’ve been watching the show New Girl and now I’m kind of obsessed with Jess and Schmidt. So there’s this episode that was on earlier this week while I was texting with the husband (who is spending the week in Brazil for work) where Jess was apparently baking either an apple or a banana bread for someone from school. Long story short, that was my inspiration for today's recipe, my take on a healthy and moist Banana Bread, hope you like it!



Ingredients


Dry ones

  • 2 cups of all-purpose flour

  • 1 ½ cups of oats flour (regular oats grounded in a blender)

  • 3 tsp baking powder

  • 1 ½ tsp baking soda

  • ½ tsp pink salt

  • 1 tbsp hemp seeds

  • 1 tsp ground cinnamon

  • 1 tsp ground ginger

Wet ones

  • 1 tsp apple cider vinegar

  • 1 cup vanilla almond milk

  • ½ stick of butter

  • ¼ cup maple syrup

  • 4 eggs

  • 2 cups of mashed ripe bananas

Preparation (65 minutes)

  1. Preheat the oven to 350 F.

  2. In a large bowl whisk all the dry ingredients together

  3. In a medium bowl whisk all the wet ingredients together, just add the bananas last.

  4. Slowly pour and mix the wet ingredients mix into the large bowl of dry ingredients. You can use either a whisk, spatula or your fancy mixer for this. Just make sure not to over mix it.

  5. Grease a pan before pouring the mixture into it. I’m using the pan you see in the pictures for this bread but you can use whatever baking have you have available.

  6. Bake for 45-50 minutes. You can tell the bread is ready when you stick a toothpick or a fork in the middle and it comes out clean.

  7. Let it cool before serving! I used a cashew icing as glaze and some chopped almonds. Nom nom nom!

You HAVE to make this recipe at home, it is perfect for the holidays and goes awesome with a cup of tea or coffee.


PS. For those Facebook friends who voted for apple bread (Yes, you know who you are). Just substitute the 2 cups of mashed bananas for 2 cups of shredded apples, the ones you prefer. You’ll get the same tasty result.
