Hello everyone! Hope you're starting an awesome weekend as I am right now, I took a couple of days off from work and decided to spend the weekend in NYC :) I have reservations in a couple of restaurants so expect versions of their dishes anytime soon!
Today I'm bringing sweetness for you in the form of cheese, yogurt and fruit. Mascarpone cheese is one of my guilty pleasures I must say, it definitely adds a lot of flavor to almost every dessert you have in mind so today we'll use it to make this "Mascarpone Bites", this recipe works great if you're looking for a sweet and small dessert after a heavy dinner.
INGREDIENTS (almost 20 bites)
2/3 cup Mascarpone cheese (I'm using a low fat version for this recipe).
1/2 cup Greek yogurt (also low fat).
2 tbs Vanilla extract.
1 tsp. ground cinnamon (I'm using Vietnamese cinnamon today).
1 egg white.
2 green apples.
6 strawberries.
1 tbs. Poppy seeds.
PREPARATION (10 - 15 min)
Before starting make sure all ingredients are room temperature, this will make your life easier and the recipe will turn much better.
Use a big bowl to add the mascarpone, Greek yogurt, vanilla extract and cinnamon, then whisk it all together until you have a smooth paste.
In a separate bowl, whisk until you merengue the egg white; you just have to keep whisking very quick for about 3 minutes.
Now you can use either a spoon or the same whisk to slowly incorporate the merengue to the mascarpone paste. Now pour it all into an icing bag or simply use any plastic bag you have, put the bag in the freezer for 5 minutes. Reserve.
Chop the apples into thin slices, keep in mind that apples will serve as "chips" or dippers.
Chop the strawberries into 4 slices each.
To serve just make a big hole in one of the plastic bag corners, cover the apples slices with the mascarpone icing, place a strawberry piece on top and finally just "make it rain" using the poppy seeds.
It seems like a lot of work because of the many steps but really it isn't, you really have try them, these things are addictive!
